Changes in consumer demand in relation to e.g. organic production, alternative approaches to eating (e.g. raw, vegan, etc.), as well as the rise in food allergies and intolerance. In addition to this the impact of environmental pressures from food production, bring with them consumer, social and technological changes in the food industry with an impact on children's nourishment and nutrition. The project is focused on foods that can be used in schools, school cafeterias, school canteens and foods suitable for allergy sufferers and coeliacs.
